Try serving these warm delicious pancakes on a cold winter Sunday morning.
Ingredients:
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/8 teaspoon salt
1 cup milk (any type - almond, soy, dairy, etc.) I used oat milk.
2 tablespoons vegetable oil or melted butter
1 teaspoon vanilla extract
1 ripe banana (sliced and quartered)
1 cup of chocolate chips
1/2 cup of sourdough discard
Instructions:
1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
2. Add in milk, vegetable oil (or melted butter), vanilla extract, and sourdough discard.
3. Whisk until combined. Don't overmix; it's okay if there are a few lumps.
4. Fold in a banana and chocolate chips
5. Heat a non-stick skillet or cast iron pancake griddle over medium heat and lightly grease with oil or butter.
6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown on the other side.
7. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
